We start with respect for our bees. Our honey is solely from local swarm-caught bees. With local genetics, our bees are better acclimated to our flora cycles and seasons. We use a sustainable system: no feeding sugar syrup, no treating with chemicals, no manipulating the brood or preventing swarms. We harvest in the fall from the surplus honey the bees have stored, ensuring they have enough to make it through the next spring. The hives are made of locally-sourced wood from the Amish. Rough-cut and thick, we mimic tree-hollows. The boxes are fixed and spread throughout the wood, not clustered together.
The honey for sale at the store is a LIE! Profit pushes the industry to buy and blend honey from different areas, even countries, in order to fulfill their contracts. Commercial and hobby beekeeping relies on mass-feeding of sugar syrup, yeah sugar water, for their "pure" and "natural" product. Look it up. We don't feed our bees! Our bees produce honey from the natural gathering of nectar and pollen. Wildflowers such as asters and goldenrod combine with the local alfalfa to make a honey with a floral bouquet. That's the taste!
Not long around here! We bake with it instead of sugar. Honey has an indefinite shelf life if stored properly in a cool, dry place. If it lasts long enough, it will crystallize rather quickly as it hasn't been adulterated.
